  • About AdamI have worked as a chef in Vic and London before moving to the front of house and becoming increasingly interested in wine. Then I worked as a cellar hand with a who’s who of Australia and France, including Torbreck, Chapoutier, Mitchelton, Domaine Ogier, Heathcote Winery, Jasper Hill and Domaine Pierre Gaillard. I became convinced that the Cambrian soils of Heathcote could produce the best possible shiraz, and since 2004 I have purchased grapes from the region, using the full bag of open ferment techniques, with 30% whole bunches, extended cold soak, wild yeast and mlf and hand plunging, then 13 months in French oak, bottled unfined and unfiltered. Exports to the US. In 2007 I paired up with a Lincoln Riley, a great friend and one of Australia’s best Somilliers to embark on the Foster e Rocco Project. We are now Now with five vintages on Syrami under my belt, and three Foster e Rocco, the winemaking process is one of my greatest loves along with making salami, eating amazing food, fabulous art and listening to great music.

Libertine is bringing together five of Melbourne’s top past and present sommeliers who have turned their hand to making wine of their own and hosting an event in conjunction with Melbourne Food and Wine Festival’s “Put Victoria on Your Table” Winter Roast Selection. Meet Lincoln Riley – winner of the Judy Hirst Award, Sommelier of the Year for Gourmet Traveller WINE for his list at Taxi and his partner in wine Adam Foster, chef turned sommelier turned winemaker and winner two years running of Young Guns of Wine People’s Choice Award.  Their wine label is Foster e Rocco and Adam has other awarded labels, Syrahmi & L’Imposteur which will also be on show.
